First Look: Get Jumbo Prawns and Chinese-Style Duck on Fluffy Bases at Friendly New Organic Pizza in Glebe

According to Mike Green, owner of new Glebe pizzeria Organic Pizza, his pies are, “meals, but on pizza bases”. Green has clout in the pizza industry – he and his brothers ran Goodlife Pizza in Adelaide, which won the Restaurant and Catering Association’s award for best pizza restaurant in Australia three years running.

Organic Pizza aims to serve a healthier take on pizzas, made with (mostly) certified organic ingredients. Its dough, made with organic flour, rests for at least 36 hours, for a lighter, fluffier base that’s easy to digest. Its toppings aren’t strictly Italian but bring into the fold inspiration from all over.

Take, for example, the Chinese Duck, which takes inspiration from Green’s Chinese heritage. Open-range duck and shiitake are slathered in a punchy ginger and shallot relish his amah (grandmother) used to make.

Another hearty option is the Jumbo Prawn, which features giant prawns with Spanish onion and semi-dried tomatoes, drizzled with fresh, spicy house-made chimichurri.

“We’re trying to provide the best possible pizza – it has to be amazing,” Green tells Broadsheet. “That means carefully putting together the right produce, to get the right balance of texture, saltiness and sweetness.”

When it comes to sourcing the “right produce”, Greens goes to great lengths. Salami is couriered all the way from the Adelaide Hills. Certified organic olives travel from Wymah, a rural community in the Riverina. ’Nduja comes from Pino’s Dolce Vita in Kogarah, where it’s been made by the same family for six generations. Cashew cheese, which stars in the Vegan Delight, is an in-house creation.

Meanwhile, the wine list features drops by Green Road Wines – a McLaren Vale winemaker who also happens to be Green’s brother. There’s also a cracking pinot noir from Tassie and a selection of pét-nats.

On a clear day, the outdoor seating is the place to while away a sunny afternoon over pizza and wine. Or, take a seat inside among exposed brickwork, timber tables and giant bags of flour – purposely casual, friendly and stripped back to essentials to keep the focus on the food.

Organic Pizza also delivers, and has put a lot of time into figuring out how to dispatch a piping hot and perfectly crispy pizza to peoples’ homes. It doesn’t use third-party delivery companies; instead it has in-house delivery drivers and packs pizzas in heated warmers and well-ventilated boxes to minimise sogginess. Even the dimensions of the pineapple, the cheese-to-sauce ratios and thickness of the pepperoni have all been taken into consideration to ensure the pizza people are eating at home is of the same quality as what they’ll get dining in.
