This Mushroom Shawarma by Kirsten Kaminski is a combination of cuisines. In Thailand, I got inspired to use oyster mushrooms as a juicy meat alternative, and in Israel I learned to love the smell of shawarma. Combining the two creates a mouthwatering dish that is one of my most popular recipes among family and friends. Take a bite of the warm pita filled with creamy hummus, tahini, salad, tangy amba and crispy mushrooms, and fly to heaven!   Reprinted with permission from The Traveling Vegan Cookbook by Kirsten Kaminski, Page Street Publishing, Co. 2021. These Garlic Smashed Potatoes by Maggie Wescott are crispy on the outside and fluffy on the inside.  Perfectly browned and bursting with garlic flavor, it’s hard not to eat these directly from the sheet pan! Advertisement

I readily admit I love the convenience of canned beans. But I had a bad experience with my favorite brand that shall remain unnamed: they sold big cans of beans cooked to perfection, but then something happened and the cans had way more liquid than actual beans. After recurring issues and some very feeble customer service response, I decided to cook my own. I’m grateful because they are even better. And it doesn’t even take that long. Not to mention, this Uncanny Chickpeas by Celine Steen cheaper. In your face, nameless brand. Advertisement

This Microbiome Veggie Broth by Nikki and Zuzana is for those who are looking to rebuild gut function and resolve issues like leaky gut syndrome, candida overgrowth, SIBO, and other health problems. It’s rich in plant-based amino acids, collagen promoting nutrients, trace minerals, and electrolytes. The recipe is fairly simple, though the ingredient list is a bit lengthy. It might be tempting to buy readymade broth from the store, but I encourage you NOT to do that!  The packaged broths are always full of sodium and with not much else. With this recipe, the idea is to pack an immense amount of flavour into the broth, as well as get the maximum number of nutritional benefits Advertisement

This revolutionary healthy Chocolate Spread by Jamie Raftery has just 4 ingredients – takes 30 seconds to make – contains no nuts – no added oils and comes full of brain-boosting omega fats and minerals. You will never go back to store-bought chocolate spreads ever again and this recipe provides a digestive rest from overindulgence of nut-butters!

Deliciously crispy Dill Flavored Lentil Fritters by Priya Lakshminarayan makes for a great snack or breakfast. A recipe that’s light on the oil and easy to make. Do try it today!

Who doesn’t love a crispy, crunchy corn fritter? You will want to eat as many of these Jalapeño and Corn Fritters by Smith and Daughters: A Cookbook (That Happens To Be Vegan) as you can get your hands on. The jalapeño adds the perfect touch of spicyness to compliment the sweetness of the corn. Advertisement

Chia seeds are a super food, loaded with health-promoting omega-3 fatty acids—nearly five grams in a one-ounce serving! They are also an excellent source of fiber at 10 grams per ounce (about 2 tablespoons), and contain protein and minerals including iron, calcium, magnesium and zinc. Try out this Blueberry Chia Pudding by Helyn Dunn!

These Quesabirria Tacos by Mitch and Justine Chapman are a mess worth making. Each tortilla is dipped in a rich, savory broth, stuffed with crispy oyster mushrooms, and fried on each side. Serve each one with extra sauce, fresh veggies, and plant-based cheese. This dish is a true expression of Mexican flavors at its finest!

This Asian Rainbow Salad by Lena Novak is a colorful and refreshing blend of veggies with flavorful citrus dressing. It is perfect for hot summer season; however, you can enjoy it anytime of the year.
